PICKLED TROPICAL FRUITS:

There is an abundance of pickled tropical fruits to go along with all the meals offered by the Surinam kitchen!


* Pickled Tahiti Limes.
To add taste to the meal. pickled tahiti lime

Ingredients:

* 12 Tahiti limes
* 4 oz. Salt
* 2 oz. Clove
* 3 oz. Vinegar

Instructions:

Grate the skin from the limes.
Wash these in water.
Let stand in hot water for 3 days (and nights).
Refresh the water daily (pour hot water again).
* After this:
Make a cross-like cut at the underside of the fruits.
Salt these down and insert the clove in the fruits (through the cut).
Put in a cleaned (cleaned with boiling water) jar.
On the bottom and between the layers (of limes) sprinkle with salt.
The top layer should be covered entirely with salt.
Shake the bottle daily until all the salt is dissolved.
* After this:
Add vinegar and let stand until a thick syrup is formed in the jar.
This can take 2 - 3 weeks.

* Optional:

For a special taste, one can add cayenne pepper and/or daun salam before covering the limes with salt.
